Authentic Fettuccine Alfredo


I LOVE Italian food, so I am always searching for the most authentic and delicious dishes. Fettuccine Alfredo happens to be my absolute favorite! Not long ago, I found out that true Alfredo sauce does not contain cream. Shocked, I began surfing the internet for a recipe. I found one at An Italian in My Kitchen. I thought that it was delicious, but as usual, I had to create my own recipe. It is super simple. This recipe takes about 20 minutes to make. It even makes enough for my family of eight!



The first step is to cook the pasta according to the instructions on the box (eventually I will try making homemade pasta). When the pasta is cooked, DO NOT DRAIN THE WATER. This pasta water is necessary for a later part of the recipe. You cannot substitute plain water. We need the starches from the pasta water to help the ingredients incorporate! DO strain the pasta, but set aside the water it was cooked in. Melt half of the butter in a large pot on medium-low. Mince the garlic and heat it with the butter. Stir.


Once it becomes aromatic, sprinkle in one-half a cup of the parmesan cheese. Pour in one-half a cup of the pasta water. Allow the cheese to melt. Begin stirring with a whisk to incorporate the butter, cheese, and water.

When it begins to come together, toss the pasta in the pot. Divide the remaining butter into chunks and toss to melt in the pasta. Mix the remaining cheese in stages, tossing in between. Add another one-quarter cup of water.

Add the pepper and nutmeg. Continue heating. Add dried parsley. Serve quickly and enjoy!




 

RECIPE


Makes: 8 Cook Time: 20 minutes

  • 16oz box of fettuccine pasta

  • 2 cups of parmesan cheese

  • 1 cup of butter

  • 2 cloves of garlic

  • 1/2 teaspoon ground nutmeg

  • 1 1/2 teaspoons dried parsley

  • pepper to taste


DIRECTIONS:

Cook pasta according to package directions. Save the pasta water after cooking. Strain pasta and set aside. Melt half of the butter on low in a pot and mince the garlic into it. Heat until the garlic becomes aromatic. Sprinkle in 1/2 cup of cheese and 1/2 cup of the pasta water. Whisk until the ingredients begin to incorporate. Toss in the pasta. Divide the remaining butter into chunks and toss in the pasta. Mix in the remaining cheese in stages. Pour another of 1/4 cup of the pasta water into the pasta. Toss. Add pepper, nutmeg, and dried parsley. Continue to heat for another minute and then serve immediately.
